營養教育對改善幼兒油脂與糖類攝取的影響

Effect of Nutrition Education on Improving the Fat and Sugar Consumption Practices of Young Children

摘要


本研究之目的在探討家長與托兒園所參與營養教育介入,對台南市與台商縣仁德鄉4到6歲的幼兒,在改變油脂類與糖飲食選擇的成效差異。研究對象被分成為四種不同營養教育介入模式,分別為家長暨托兒組、家長介入組、托兒所介入組以及控制組。由家庭主要照顧者及托兒園所幼教老師進行五週的營養教育介入,內容包含了五種營養教案。資料分析包括人體測量、食物攝取頻率、幼兒營養知識、態度與行為問卷調查。結果顯示:營養教育介入六個月後家長暨托兒組與家長介入組的幼兒,均顯著維持較高之營養知識測驗分數;此外,家長暨托兒組的幼兒有較明顯的正向飲食態度,以及減少糖份的攝取行為。綜合實驗數據,家長參與教育介入對於改善幼兒營養知識、態度與行為不僅可行也很重要。

This study compared the efficacy of a home-based program to an equivalent school-based program with 4- to 6-year-old children in Taiwan City and Jende Shiang, Taiwan County in order to detect changes in dietary fat and sugar consumption. These children were assigned to four different nutrition education involvement conditions, a home-and-school, a home, a school and, a control condition. Five-week programs including five nutrition education sections were taught by childrens’ school teachers and home caretakers. Outcome measures included anthropometrics, food intake frequency, and a questionnaire for measuring knowledge, attitudes, and behaviors toward nutrition. Children in the home-and-school- and in the home-based conditions achieved higher knowledge scores at the final sixth month test compared to children in the school- and control-based conditions. Furthermore, children in a home-and-school-based condition reported greater health attitude changes and reduced sugar intake in their diets. Taken together, the data suggest the feasibility and importance of parental involvement in nutrition knowledge, attitudes and behavioral changes in children of this age.
