摘要


燕窩是亞洲國家的高貴滋養補品,因為產量有限及前處理麻煩使得價格高昂,因此有許多贗品及摻假產品。近年來許多新的檢驗方法被發展出來,或以鑑定其成分比例,或利用特異性抗體檢驗,但皆無法檢測燕窩摻偽品中的摻假比例,只能用於鑑別燕窩的真假。本研究以酸水解法分離燕窩中的唾液酸,發現燕窩的多醣含有兩種唾液酸,分別為N-acetylneuraminic acid (Neu5Ac)和 4,8-anhydroneuraminic acid (Neu4,8an5Ac)。根據文獻搜尋,從1987 年Pozsgay 等人在燕窩發現Neu4,8an5Ac 後,到目前為止還未發現其他生物含有這個特殊的唾液酸。Neu4,8an5Ac 是一個分析燕窩時,可以偵測到大量存在的特殊唾液酸,因此Neu4,8an5Ac 的特殊性可以作為燕窩鑑假的新指標化合物。

Bird's nest is a nourishing healthy food in Asia area. Because of the limited production and the troublesome pre-processing of bird's nest, its price is at high level and keeps going up; therefore, a lot of false or adulterated bird's nests appear in market. Recently, some examination methods have been developed to authenticate bird's nest, including authenticated by their ratio of each compositions, by using specific antibodies, however, it could be used to distinguish true bird's nest to false one, but hard to estimate the ratio of true bird's nest in the content of food. Bird's nest was treated with HCl to hydrolyze and release its sialic acids, and which was separated from hydrolysate by gel filtration chromatography. Analyses of these sialic acids showed that two kinds of sialic acids, N-acetylneuraminic acid (Neu5Ac) and 4,8-anhydroneuraminic acid (Neu4,8an5Ac), was in bird's nest. Neu4,8an5Ac was first found in 1987 by Pozsgay et al. We found that Neu4,8an5Ac was a specific and massive sialic acid existed in bird's nest and never reported in other organisms again. Hence, this new sialic acid, Neu4,8an5Ac, may be used as a new indicator for the authentication of bird's nest.
