市售油條、馬鈴薯與番薯製品中丙烯醯胺含量調查

A Survey of Acrylamide in Twisted Cruller, Potato and Sweet Potato Products

摘要


1994年世界衛生組織癌症研究署將丙烯醯胺歸類為「2A-可能會造成人類癌症」的致癌物,顯示已有足夠證據證明丙烯醯胺對實驗動物之致癌性,於人類則尚未有直接證據。2002年瑞典國家食品管理局進一步證實,富含碳水化合物之食品經高溫加熱後會產生丙烯醯胺,引起各界關注,許多研究亦指出丙烯醯胺具有神經、基因、生長發育等毒性。因此各國開始調查食品中丙烯醯胺含量,期能經由飲食的暴露量,評估各年齡層的風險。本研究以液相層析串聯質譜儀分析85件市售油條、馬鈴薯製品、番薯製品及洋芋片之丙烯醯胺 含量,結果油條類、馬鈴薯類、番薯類及洋芋片之丙烯醯胺含量分別介於112-744 μg/kg、N.D.-1423 μg/kg、N.D.-349 μg/kg及179-2979 μg/kg,平均值以洋芋片最高,番薯類較低。

Acrylamide (AA) has been classified as "probably carcinogenic to humans" by the International Agency on Research on Cancer in 1994. Latter in 2002, the Swedish National Food Authority announced the findings of considerable levels of acrylamide in heat-treated carbohydrate-rich foods. The findings attracted interest from worldwide, since AA has neurotoxicity, genotoxicity, and reproductive and developmental toxicity. Recently there were more literatures published concerning the health risk to human, contents in different foods, formation pathways, methods of analysis and the mitigation strategies in food. In the present study, the AA content in four specified foods with a total of 85 samples has been determined by the LC-MS/MS method. The data showed that the AA contents in twisted crullers, potato products, sweet potato products, and potato chips were in the range of 112-744 μg/kg, N.D.-1423 μg/kg, N.D.-349 μg/kg, and 179-2979 μg/kg, respectively. The mean AA content in potato chips revealed the highest value, and that in sweet potato products showed the lowest value.
