茶道與養生-綜論朱權《茶譜》中的茶學特點

Tea Tao and Regimen the Connotations of Tea-Related Disciplines in Zhu Quan's Cha Pu

摘要


朱權《茶譜》是中國茶史發展中具有代表性的重要著作,是宋代點茶、明代葉泡之間重要的轉變關鍵,學者譽為「真正開千古茗飲之宗」,朱權也以「崇新改易,自成一家」之茶學特點,高度肯定其意義價值。經檢視相關資料後,筆者認為有一個值得探討的主題,即是:朱權出身明室皇族,乃名聞天下的藩王,因遭受政治磨難而不過問政事,並潛心於茶道、戲曲之中。究竟,茶道對他的影響如何?他對於「茶與養生關係」的認知觀點及態度為何?《茶譜》的茶學特點又是如何?皆本文之所以撰寫的緣由。內容分為兩部份:其一,茶性功能,歸納為兩項:食療認知、心性修養。其二,感官品評,歸納為兩項:行茶要素、行茶流程。

Zhu Quan'sCha Pu, a crucial representative work in the developmental history of Chinese tea, signifies a critical transition between the tea-whisking and tea-brewing techniques used during the Song and Ming Dynasties, respectively. Scholars praised Zhu Quan as being a "tea-drinking pioneer through the ages. Moreover, Zhu Quan instilled values in tea-related disciplines through innovative and original techniques. By reviewing relevant data, we studied the relationship between Zhu Quan and the tea disciplines. Zhu Quan was born into a royal family during the Ming Dynasty and was renowned as a territorial ruler. Because of political tribulations, Zhu Quan devoted himself to tea and drama-related disciplines unrelated to political affairs. The purpose of this study was to determine the influences of the tea-related disciplines on Zhu Quan,the cognitive perspectives and attitude of Zhu Quan regarding the relationship between tea and regimen, and the features of tea-related disciplines in Cha Pu. This study comprised two parts: (a) categorizing the functions of tea into the items of dietary therapeutic awareness and mental cultivation, and (b) classifying sensory evaluations into the items of tea-making elements and tea-making procedures.
