毒道之處,看不見的飲食危機

The Way of Toxicity: The Hidden Hazard in Our Daily Life

摘要


自然環境變遷與人為加工製作,造成生活中充滿各種已知與未知的毒性物質或食品添加物,影響所及,我們所食用的食材中,不免或多或少殘留劑量不一的毒性物質或食品添加物。於此前提下,「只講毒,不講量」只會引起民眾恐慌,並非食品毒理學之風險溝通方式。本文認為,消費者應摒除「零檢出」、「零風險」等錯誤觀念,採用風險評估之科學數據檢視食安相關事件,自可區別食安事件中的真假議題。

There are many known and unknown chemicals in our daily life due to environmental changes and manufacturing, which inevitably cause the residue of toxic substances and food additives in our food. Under this premise, "the idea of toxicity without exposure" will only cause public panic. It's not the proper risk communication method for food safety. We believe that consumers should abolish the misconceptions such as "zero detection" and "zero risk". To review the food safety related incidents based on the scientific risk assessment data. As a result, we can easily distinguish the genuine issues from fake news in food safety incidents.
