大溪地唐餐/Maa tinito的在地性

摘要


大溪地的唐餐是華人家庭的常備料理,也是在當地價位不等的餐廳、小吃店所常見的菜系。本文將以兩道與華人密切連結、並具代表性的菜色—maa tinito(唐餐)與poisson cru à la chinoise(唐人魚生),來剖析大溪地華人飲食在身體習慣與認同論述上的延續與在地的創新。本文以2004年與2005年間、田野資料與報章雜誌的廣告來勾勒出大溪地唐餐的在地性質,包含移民蔬菜耕作的背景與在地唾手可得的魚鮮食材。其次,經由餐飲論述中廣義的唐餐,聯繫起中國家鄉風味、進而強調大溪地華人飲食上有別於傳統中餐的獨特性。除了特殊的菜色之外,多種食材大火快炒的烹調手法以及對於熱食的偏好,影響而形成了當地人定時並共同進餐的習慣。此外,法國同化政策在華人由移民轉變為公民的歷程上,也挑戰了華人的飲食習慣,主要表現在餐具的選擇、以及進餐與烹調的空間上。唐餐在華人與Ma’ohi(馬歐希人)、Demi(半白)與法國人互動愈密切的情況下,其內容與意義都產生了變化。在不同的對話互動的情境裡,華人飲食可能抽離出少數的元素做為符號,也可能相反地強調正統的原汁原味。在此同時,香港禮聘來的粵菜廚師也成為重行界定大溪地唐餐的一股新脈絡。原先習慣性的個人或家庭飲食,成為大溪地華人身份再現的一種媒介。

There is a Chinese Tahitian population descended from free migrants dating from the early 20th century. These Polynesians of Chinese origin have contributed to the popularity of maa tinito (Chinese cuisine) on Tahiti till this day. However, an analysis of the development of two well-known Chinese dishes in maa tinito (fried ground pork with red beans over rice) and poisson cru à la chinoise (raw fish with vegetables) reveals local origins reflecting to meagre immigrant beginnings and their farming background. The presentation of local Chinese cuisine takes place in a constant dialogue with other Chinese, fellow Ma'ohi, Demi and French citizens.
