臺灣在地食物網絡農夫市集的研究

A Study on Taiwan Farmers' Market in Local Food Network

摘要


摘 要 近五年多來,全台正興起在地食物網絡的熱潮,不管是政府推動的營養午餐、穀東制度、共同購買制度及全台的農夫市集,這些運動的背後顯示,一股支持小型農業生產者的力量正在形成,現行的運銷制度讓小型農業生產者失去的舞台,農產品運銷制度產生中間商轉運成本,使得農友無法獲得生產農產品應有的利潤 ,藉由在地食物網絡農夫市集的盛行,農友將在這股力量的支持下重新站上台。 本研究分析的對象以全台農夫市集及農友參與農夫市集產生認同情形,發現透過消費者與生產者面對面溝通的機會,減少農產品因現行的運銷制度產生的轉運成本,讓消費者以合理的價格購買到安全健康的農產品,瞭解在地食物網絡消費的模式,以及減少食物里程及支持生物多樣性的理念。透過本研究整理將農夫市集的不同營運狀況分析,讓不同標竿的農夫市集成為追隨者的典範,並能提供政府未來輔導及建立制度的方向,在台灣在地食物網絡建構上有所貢獻。

Abstract In recent five years, the prevailing of local food connections is springing up all over in Taiwan, whether the government promoted a program that provide lunch to school children, the shareholders’ system, the cooperative purchase system, or farmers' markets. These movements reveal an emerging force that supports agricultural producers. The existing agricultural products distribution system leads the small-scale agricultural producers to great crisis. The farmers unable to obtain reasonable profit from producing agricultural product due to the marketing cost of middleman. By the movement of farmers' markets that contributes to local food connections, the small-scale agricultural producers can subsist on competitive market once again. The research is based on analyzing cultural diversity of farmers' markets and the degree of farmers’ participation. Through farmers' markets, producers have the opportunity to communicate directly with consumers to reduce marketing cost of middleman and then consumers can acquire healthy and safety agricultural product. Farmers' markets make consumers to realize the production-marketing model featuring fresh and healthy agricultural products sold directly by farmers to consumers and the concept of biodiversity. In conclusion, the study contributes to construct local food connections in Taiwan. It not only suggests that the operation differences in farmers' markets to establish variety models but also provides the direction to consult and set up the system.
