適用於台灣女性之洗滌檯面高度

摘要

女性為家庭主要烹飪角色，而廚房作業易造成身體痠痛及心理壓力等困擾，因此，作業環境符合人因尤為重要。因此為探討台灣女性進行廚房各種洗滌作業之檯面高度與可接受的高度範圍，首先透過問卷調查了解現有廚房作業狀況、典型水槽樣式及歸納現有文獻提出洗滌台尺寸建議與符合各族群之作業檯面高度，後續以心物法與主觀感受量表(RPE)進行四項任務之檯面高度實驗並了解身體各部位的施力感受。
實驗結果得知不同身高及不同任務確實會影響水槽內部檯面高度，因此建議洗滌作業檯面高度可分身高及任務進行調整，洗滌台的設計也可依使用者身高範圍高度訂定。以廚具設計廠商欲推出廚具的角度，訂定固定式、可調式洗滌台高度與內部檯面高度如下，固定式:由於多數人為5%-95%族群使用者，其高度建議尺寸為洗滌台高度92公分，內部檯面高度76.97公分，而若使用者為5%ile族群其適合洗滌台高度86公分，內部檯面高度69.67公分，95%ile族群則訂定洗滌台高度98公分，內部檯面高度85.17公分。另外，本研究以可清洗所有洗滌任務來訂定可調式內部檯面高度範圍建議如下:5%ile: 68.67-73.33公分。5%-50%: 75.77-78.38公分。50%-95%: 78.92-80.08公分。95%ile: 85.50-86.83公分。

Female is considered to be responsible of cooking for their family, and the kitchen work could easily lead to physical soreness and psychological distress. Therefore, it is very important to provide an operational environment that meets the requirement of human factor. This study aims to discuss the acceptable height range of countertop of the kitchen basin where female do all the washing chores. First of all, a questionnaire was conducted to discover the operation condition of current kitchen work and typical style of kitchen basin, then literature review was carried out to summarize proper countertop height to meet demands of different group, and then an experiment was accomplished to explore the force of different body parts when doing housework in 4 different countertop heights and the measurement was calculated by psychophysical approach and rating of perceived exertion (RPE).
The experiment showed that different body height of users and differnt tasks would fit into different countertop height of kitchen basin and suggested that it should be adjusted accordingly. The kitchen basin should be designed based on the height of users. From the viewpoint of kitchenware manufacturer, the kitchen basin can be made as fixed or height adjustable model; and the countertop height and tank height of fixed model are suggested as followed. Considering the majority group is 5% to 95% users, the countertop height is suggested as 92cm and tank height as 76.97cm; the 5%ile users are suitable for 86cm countertop height and 76.97cm tank height while 95%ile users are suitable for 98cm countertop height and 85.17cm. In addition, the recommended tank heights for all washing tasks are 68.67 to 73.33cm for 5%ile, 75.77 to 78.38cm for 5%-50%, 78.92 to 80.08cm for 50%-95% and 85.50 to 86.83cm for 95%ile.
