中餐烹調移民女性職業訓練專班訓練師之教學

摘要


本研究旨在瞭解中餐烹調移民女性職業訓練專班訓練師之教學。本研究以三位中餐烹調移民女性職業訓練專班之職業訓練師為研究對象且採用半結構深度訪談法與觀察法進行資料蒐集,並以主題分析法進行資料分析。   本研究主要結論如下: 一、訓練師認為移民女性為經濟弱勢,藉由職訓取得證照以求職。 二、訓練師會先了解學員國籍背景並將其家鄉料理融入課程;為因應閱讀中文教材有困難之東南亞籍學員額外補充圖解說明之教材。 三、邀請學員分享家鄉料理,面對中文識字力較弱之學員,訓練師耐心教導外,更鼓勵學員踴躍提問並提供術科的個別指導。 四、面對不同特性的移民女性學員,訓練師重視其同儕相處問題,以同理心互動,並傾聽、理解移民女性學員,亦採用多元職訓方式提升課堂師生互動。 五、教授過移民女性專班,讓訓練師更具多元文化素養,豐富了課程內容與提升其教學專業,改變其對移民女性之觀點。   最後,本研究根據上述研究結果,針對中餐烹調職業訓練師、職業訓練單位,以及未來相關研究等方面提出建議。

This study is aimed to understand the teaching of the vocational trainers in Chinese cuisine training for immigrant women. The research subjects for this study were 3 vocational trainers in Chinese cuisine training for immigrant women. This study used semi-structured interview and observation to collect data, and thematic analysis was used to analyze data.   The main conclusions for this study are as follows: 1.The trainers thought that immigrant women were economically disadvantaged, and they obtained the certificates for job-searching via vocational training. 2.The trainers would first understand students’ nationality and then integrated their hometown cuisine into the course. The trainers also supplemented some additional teaching materials with the graphic illustration, so as to cope with students who were from Southeast Asia and had difficulty in reading Chinese teaching materials. 3.Students were invited to share their hometown cuisine. Faced with students with weak ability in Chinese word recognition, in addition to the patient teaching, the trainers also encouraged them to actively raise questions and provided the individual guidance of technical courses. 4.Faced with immigrant women students with different characteristics, the trainers emphasized the issue of getting along with peers, listened to them with empathic interaction and understood immigrant women students. Also, the trainers used diversified vocational training methods to improve the interaction between teachers and students in class. 5.By teaching the immigrant women, the trainers got more multicultural literacy, enriched the course contents, improved their teaching professionalism and changed their opinions towards immigrant women.   Based on the research results, this study proposes the suggestions aimed at vocational trainers in Chinese cuisine, vocational training units and the future relevant researches.
