摘要


王品集團是目前最成功的餐飲企業,旗下各間子企業,各自經營不同類型的餐飲與服務,他們秉持『除了餐飲料理,更堅持「感動式」服務』的精神,屹立不搖於餐飲品牌龍頭的位置。而室內設計師,如何在這種前提下,於空間規劃上,有別於一般「目的性用餐空間型」的商業空間,創造出更多元的「感知」空間,成為本設計論文主要動機。本設計論文探討品牌餐飲與女性空間,企圖了解女性在空間中的需求,並設計出適合女性享受的用餐空間,提供王品做為未來展店之可行設計方案。設計對象以王品集團旗下夏慕尼餐廳為主,且分析相關餐飲品牌之個案;以文獻分析、實際田野調查為方法,繼而擬定設計假設,最後以室內空間設計提案探討空間的品質與氛圍。結論如下:(1)在女性氛圍的形塑上,空間中的線條與物件陳設,可積極利用軟裝元素來柔化空間;(2)設計以女性導向的商業空間,應將廁所空間也納入整體考量中;(3)在整體空間的形塑上,應緊密地將品牌帶入空間中。

Wowprime, the most successful food and beverage empire in Taiwan, has branched into several subsidiaries managing various types of dining services. Insisting on making dining experiences both personal and memorable, Wowprime has established itself as the leader of the Taiwanese restaurant industry. The purpose of this study was to determine how interior designers could utilize spatial planning to elevate regular commercially-oriented dining spaces to diverse perception-sensitive spaces. This study specifically investigated brand restaurant chains and female-oriented spaces. The author attempted to better understand female spatial needs, so that female-specific dining spaces could be designed for Wowprime’s future endeavors. This design was focused on the Chamonix restaurant, a subsidiary of Wowprime Corporation, and involved analyzing competing brands. Through literature review and fieldwork, the author formulated a priori design assumptions, and investigated spatial quality and atmosphere. The conclusion and recommendations drawn from this study are summarized as follows: (1) In constructing a female-oriented atmosphere, the spatial lines and furnishings should employ softer elements to soften the space; (2) When designing female-oriented spaces, the restroom should be considered a point of focus; (3) The brand image should be seamlessly woven into the space.
