摘要


花生風味香醇,營養豐富,向來為人們喜愛食品之一;惟花生在成長及原料處理階段,易受黴菌侵害而有黃麴毒素污染之可能;為保障消費者食的安全,本局於90年度函請各地方衛生局,送驗花生糖及花生醬等製品進行黃麴毒素之檢測。 結果於59件花生糖、21件花生醬、36件粒狀花生及2件花生粉,共計118件花生製品中檢出2件不合格,針對這些不合格之產品已函請製造工廠所在地之轄區衛生局,依照食品衛生管理法進行後續處理。 本調查顯示,花生製品污染黃麴毒素之不合格比例雖較以往下降,但消費者於選購時,仍應儘量選擇新鮮、外觀正常、具較完整顆粒,並且由信譽良好之廠商所生產之花生製品,以確保食的安全;而廠商亦應選用優良之花生原料,嚴格作好品質管制,如此才能保障花生製品之品質安全。本調查係本局之比較檢驗,曾於九十年八月三十日發布新聞在案。

During the period of December 2000 to June 2001, 59 types of peanut candies, 21 peanut butter, 36 peanut and 2 types of peanut powder were sampled from Taiwan to analyze the aflatoxin by the Chinese National Standard method CNS 4090 N6097. The aflatoxin contents of one type of peanut candy and one peanut butter, i.e. 1.7% of the total samples, exceeded the aflatoxin limitation for peanut products. The limitation was promulgated as 15 ppb by the Department of Health, R.O.C. The result of this survey was also provided to the public by media and to the local sanitary bureaus for supervising the peanut products manufacturers in products improvement.
