猴頭菌(Hericium erinaceus)為食藥兩用真菌,其發酵菌絲體中富含γ-胺基丁酸(γ-aminobutyric acid, GABA)及猴頭素A,具有助眠及神經修護之功效。首先分析猴頭菌固態發酵三週糙米產物可於較短時間內產生高含量的GABA(496 mg/100 g)及猴頭素A(14.9 mg/100 g)。以正常飼料及混入1、3、5%猴頭菌固態發酵三週糙米產物之飼料進行30天自由採食,於餵食後第1、7及30天進行睡眠試驗。第1天和第7天各組之睡眠潛伏期及長度均無顯著性差異,第30天僅有食用5%猴頭菌發酵物飼料之小鼠其睡眠長度顯著長於其他組,且在實驗期間各組之體重增長率、飼料及飲水消耗量均無顯著差異。在第31至40天所有小鼠皆改餵一般飼料,則第40天所有組別的小鼠之睡眠潛伏期和睡眠長度並無顯著性差異,故猴頭菌固態發酵糙米產物含有GABA及猴頭素A可發展成例行長期食用的助眠保健產品。
Hericium erinaceus is a well-known edible and medicinal mushroom. Hericium erinaceus solid-state fermented rice product has rich content in γ-aminobutyric acid (GABA) and erinacine A. Hericium erinaceus solid-state 3-week fermented brown rice product had GABA 496 mg/100 g and erinacine A 14.9 mg/100 g. In the hypnotic experiment of ICR mice, 3-week male ICR mice was adapted for 7 days, then they were feed 1, 3 and 5% of Hericium erinaceus solid-state fermented brown rice product for 30 days and induce sleeping on the 1^(st), 7^(th) and 30^(th)day. There was no difference in body weight increase rate, food and water consumption among each group. And also no difference in sleeping lantency and duration on the 1^(st) and 7^(th) day. Only feeding 5% solid-state fermented brown rice product had significant longer sleeping duration on 30th day. All mice were fed a normal diet from the 31^(th) to 40^(th) day, there was no significant difference in sleep latency and sleep length of mice in all groups on the 40^(th) day. Therefore, the Hericium erinaceus solid-state fermented brown rice products containing rich GABA and erinacine A had the potential to develop routine long term hypnotic functional food.
