功夫茶道及其文化意涵之研究-以潮汕式功夫茶為中心

Gongfu Tea Ceremony and Its Cultural meaning-a Case Study of Chaozhou-style Gongfu tea-centric

摘要


中國煮茶之道形成於唐,功夫茶道在廣東潮州府(即現今潮汕地區)及福建的漳州、泉州一帶最為盛行。「功夫」兩字有數解,它代表了費時費工的茶藝、茶人的文化素養、一種生活雅趣休閒型態。功夫茶道,其過程是很費時的;再者,功夫茶道極為費工,它的程序包括備器、淨器(含治器)、投茶、沖茶、刮沫、斟茶,均非常講究。烹飲功夫茶首先要準備四種茶器,稱為「茶房四寶」。這四種茶器它們的名字分別是:玉書碨、玉竹爐、孟臣壺、若琛甌,所選用的茶壺是馳名中外小型的紫砂茶壺。茶道的五項環節是選茗、擇水、茶具、烹茶、飲茶方式,功夫茶道對奉茶與飲茶的禮儀亦有所講究。因此,本文亦詮釋功夫茶道所蘊含之文化意涵,藉以彰顯功夫茶道的精神與優美文化。
