資訊科技發展與應用，快速改變產業作業與人類生活方式。在食品安全方面，引入自動化與人工智能技術，使製程階段安全管控更精準且節省成本。無線網路技術功能擴增與普及，使數位資訊傳遞與數據分析更即時更大量，加速對安全事件處理速度外，更提供強大的預警功能，可對「食品詐欺」犯罪建立全球防制網絡。然而錯誤或惡意虛假訊息迅速無界限傳播，對政府管理與溝通形成巨大負面衝擊。食安管理與風險溝通，未來將勢必逐步引入自動化、人工智能與無線網路技術，透過即時監控、數位資訊彙接與分析，蒐集從源頭到餐桌過程中污染及危害物質資訊，預測風險並決定管制點後，精準執行查驗措施。此外，於建構「食品誠信」之市場與消費環境上，可互享資訊的全球化資訊網絡系統將不可或缺，在不實資訊澄清與風險溝通上，勢必要更積極有效的運用網路媒體科技，確立社群內有充分的正確資訊聲量與食安信心。

The development and application of information technology has rapidly changed the types of industrial operations and human lifestyles. In terms of food safety, automation and artificial intelligence technologies are introduced to make safety management and control in the food processing stage more accurate and cost-saving. The expansion and popularization of wireless internet technology and functions make digital information transmission and data analysis more real-time and more massive, which speed up the handling of food safety incidents, and provide a powerful precautionary function to establish a global prevention and control network for food fraud crimes. However, the rapid and unrestricted dissemination of wrong and malicious fake information impose a huge negative impact on government management and communication. The food safety management and risk communication will inevitably gradually introduce automation, artificial intelligence and wireless network technologies in the future. Through real-time monitoring, digital data converge and analysis, information on pollution and hazardous substances from the source to the table will be collected to predict risks. Thus, after deciding on the control point, the inspection measures will be executed accurately. In addition, a global information network system that can mutually share information will be indispensable in building a market and consumer environment for ＂food integrity＂. In the aspect of clarifying fake information and risk communication, it will be necessary to actively and effectively use the online media to ensure sufficient correct information, and to build food safety confidence in the internet communities.
