84年1期作到86年2期作共計分析297個秈稻新品系(種)之米質,其中53個樣品來自高雄區農業改良場,244個樣品來自台中區農業改良場。分析結果發現不同秈稻品系間之碾米品質亦有不同,完整米率的變異係數比糙米率及白米率大。送檢的樣品以中等粒居多,中短粒次之,中長粒及長粒較少,大部分為中間形,只有一個品系為細長形。送檢的樣品中亦有白米外觀比台中秈10號好、蛋白質含量比台中秈10號低的新品系,一般雖以中〜低糊化溫度、低直鏈澱粉含量、軟膠性質的品系居多,但亦有部分新品系為高糊化溫度、高直鏈澱粉含量、中間或硬膠性質。目前國內秈稻育種的目標,著重在選拔具抗病蟲害及優良米飯食味之品系,於1998年5月12日TSY3165號也通過審查,正式命名為台秈2號。但為開發米食多樣化,促進米食消費量,建議今後亦應加強特殊加工用途秈米之選拔。
From the first crop of 1995 to the second crop of 1997, a total of 297 newly nominated indica rice lines were collected to test their grain quality. Among these 297 lines, 53 were from Kaohsiung District Agricultural Improvement Station (DAIS) and the other 244 were from Taichung DAIS. The results showed that there were differences in milling quality among those new lines and the coefficient of variation of head rice rate was larger than that of brown rice rate and milled rice rate. Most of tested lines belonged to medium grain size, the short-medium grain size was next, and the long-medium and long grain sizes were very few. In addition, most of tested lines belonged to intermediate shape, and only one line belonged to slender shape. Among the tested lines, there were better grain appearance and lower protein content lines than Taichung Sen 10. Most of lines belonged to medium or low gelatinization temperature, low amylose content, and soft gel consistency, however, some lines belonged to high gelatinization temperature, high amylose content, and medium or hard gel consistency. Recently, the indica rice breeders focus their attentions to selecting lines with disease-insect resistance and high eating quality, so a new line-TSY3165 was named as Taisen 2 on May 12, 1998. However, to expand the diversity and stimulate the consumption of rice diet, it is important to put an emphasis on selecting lines which can be used in the form of processed products such as rice noodle or rice cake.
