市售紅麴膠囊之monacolin K及citrinin的含量與產品價格之比較
Monacolin K and Citrinin Contents as Well as Prices of Different Brands of Ang-khak Rice Mold Sold in Taiwan

近年來，人們因飲食不正常，罹患慢性病的機率提高，尤其是膽固醇、血脂、血壓及血糖過高引起的相關疾病，許多文獻指出，紅麴中含有monacolin K，具有抑制膽固醇合成、降血壓、血脂、防癌及抗氧化等生理活性，因此市面上有許多紅麴產品，但紅麴於發酵過程中會產生橘黴素（citrinin），過多citrinin會對肝腎產生毒性，故本試驗檢測市售不同廠牌紅麴產品中活性物質monacolin K及腎肝毒素citrinin之含量，並加以比較。檢測方法係參考行政院衛生署食品藥物管理局之公告檢驗方法，並以品保數據增加試驗數據可信度，整理含量結果及產品之建議攝取量，換算每天消費者食用之monacolin K及citrinin含量，進一步與法規比對，以便瞭解市售產品中具有保健功效且對人體傷害較少之紅麴產品，結果顯示約佔37%之抽樣市售產品中之monacolin K及citrinin含量皆符合行政院衛生署食品藥物管理局之紅麴食品法規標準。另外，紅麴產品的市售價格與產品品質並無正相關。

Recently, chronic disease incidence rates have increased because of unhealthy dietary habits, with cholesterol, blood lipid, blood pressure, and blood sugar problems being especially common. Many studies have indicated that monacolin K-containing ang-khak rice mold can inhibit some physiological processes, such as the synthesis of cholesterol, and decrease blood pressure and blood lipids while also having anti-cancer and anti-oxidant effects, among other benefits. For these reasons, there are many brands of such rice molds on the market. Because citrinin may be produced during the fermentation process and because excess amounts of citrinin can cause hepatic toxicity, this study investigated and compared the quantities of monacolin K and citrinin in different brands of ang-khak rice mold sold in Taiwan. In order to quantify the monacolin K and citrinin contents of the different brands, we followed the guidelines provided by the Food and Drug Administration Bureau, Department of Health, Executive Yuan, Taiwan (TFDA). At the same time, several quality assurance tests were also performed to enhance the credibility of the test results. We also considered the suggested per-day consumption quantities listed by the different brands in order to analyze how much monacolin K and citrinin would be cosumed per day as a result. The results were compared with the standards published by the TFDA. Overall, the study will allow us to know which brands have the best health-maintaining function with the least hepatic toxicity. Results indicated that there were 37% of the ang-khak rice mold products have optimal quantities of monocolin K and citrinin, in accordance with the standards established by the TFDA.
