以CNS 1305為基準分析台灣市售蜂蜜的品質狀況

Quality Survey of Commercial Honey in Taiwan Based on Chinese National Standard 1305

摘要


蜂蜜是一種營養豐富的天然食品,具有保健保養功效。為了瞭解現今市場上蜂蜜品質,選購33件蜂蜜產品,包括9件龍眼蜂蜜及24件其它蜜源蜂蜜(國產14件及國外進口10件),對其中糖類含量(葡萄糖及果糖總和)、羥甲基糠醛(Hydroxymethylfurfural, HMF)含量、酸度及澱粉酶(diastase)活性進行品質調查。根據國家標準(CNS)1305規範,對於龍眼蜂蜜及其他蜜源蜂蜜有不同的品質標準。在本次調查中,所有產品的酸度皆符合規定。對於9件標示為龍眼蜜的產品,糖類含量未達70%以上者2件(22.2%),澱粉酶活性不達標準者3件(33.3%),HMF濃度超過30mg/kg者5件(55.6%),其餘完全符合規範的龍眼蜜有3件,其合格率33%(3/9)。另外,14件台灣蜂蜜的糖類含量皆高於60%,HMF不符標準有6件(42.9%),澱粉酶活性未達規範者1件(7.1%),而完全符合標準有7件,其合格率50%。至於10件國外進口蜂蜜,符合國家標準的有7件(70%)。綜合上述,在檢測的蜂蜜產品中,完全符合標準的產品僅佔54.5%。分析造成蜂蜜品質不佳的原因可能包括加工過程不當或廠商非法摻假、產品儲放時間太長或儲放溫度高等因素,因此在選購蜂蜜時,應慎選優良廠商檢驗合格的產品,並注意製造日期(新鮮度)及是否在陰涼處儲放。

Honey is a natural and nutritious food that is good for maintaining and promoting health. To determine the quality of commercial honey available in Taiwan, 33 honey products were purchased to investigate their sugar content (sum of the amounts of glucose and fructose), hydroxymethylfurfural (HMF) content, acidity, and diastase activity. According to Chinese National Standard (CNS) 1305, different quality criteria are specified for longan honey and for honey from other nectar sources. In this survey, the acidity of all products was confirmed. Among nine longan honey products, two samples (22.2%) were below the limit of 70% in terms of sugar content. Three samples (33.3%) had a diastase activity below the allowed limit, and five samples (55.6%) had HMF content that exceeded the limit of 30 mg/kg. Only the three remaining samples passed all the criteria of CNS 1305, representing 33% (3/9) of the total samples. The sugar contents of 14 honey products from Taiwan were all higher than 60%. Six of the 14 samples (42.9%) had high or over-the-limit HMF concentrations. Only one sample showed low diastase activity, that is, below the standard permissible limit (7.1%). Seven samples met all the criteria, representing a qualified percentage of 50%. In addition, out of the 10 samples imported from foreign sources, 7 (70%) fit the criteria. In conclusion, from the 33 samples studied, the overall qualified percentage was 54.5%. Factors that could have affected the quality of the commercial honey products evaluated include long-term storage, high-temperature storage, improper manufacturing processes, and illegal adulteration. Therefore, when purchasing honey, customers are advised to choose fresh products with a certificate of inspection.
