Study on increasing the Egg yolk the Lecithin products and estimate the purity Preparation of egg yolk oil by different dried egg yolk and different solvent to extract. Find the water content is lower the peoducts of egg ylok oil is more. Then estimate purity by color determination , POV ,&HPLC. Above the different , method too dried egg yolk , the vaccum freezing dreid egg yolk can get the best qualily products. The oxidation of triglyceride is lower undef vaccum freezing dried.
