提高蛋黃卵磷質之產率及其純度之鑑定

摘要


本研究係以各不同乾燥方式處理蛋黃粉及不同溶濟在不同時間下萃取蛋黃油,並萃取卵磷脂。以找出能有最大之獲取量。並得知含水量最少之蛋黃粉能有較好的蛋黃油產率。再以色差分析過氧化價測定及氣相色層析得知,各種不同乾燥方式中,以冷凍真乾燥方式所得之品質為最佳,三酸甘油脂被氧化的最少。

Study on increasing the Egg yolk the Lecithin products and estimate the purity Preparation of egg yolk oil by different dried egg yolk and different solvent to extract. Find the water content is lower the peoducts of egg ylok oil is more. Then estimate purity by color determination , POV ,&HPLC. Above the different , method too dried egg yolk , the vaccum freezing dreid egg yolk can get the best qualily products. The oxidation of triglyceride is lower undef vaccum freezing dried.
