A Taste of Free China- the Grand Hotel, Oversea Chinese Hostel and its Food and Reception Culture in Taiwan, 1945-1979

After 1949, Taiwan was positioned as "Free China" and this orientation in the larger struggle between Communism and the 'free world' profoundly shaped the development of listening culture and practices and, in turn, shaped a less explicit project of nation-building within Taiwan itself. Since the importance of food culture became the new interest of scholars in recent Taiwan. In order to host foreign visitors and oversea Chinese in the 1950s, the Nationalist government formally established official organizations of tourism and drew up a tourism policy, It first set about rebuilding existing facilities, notable, the Japanese shrine and guest house which was converted into the Grand Hotel and Oversea Chinese hostel. In the course of rebuilding, the Japanese symbolism of the building was overwritten by a Chinese symbolism. The thesis examines the changes of food cultures in hotel since 1945 when Taiwan was constructed as Free China by investigating the Grand Hotel, Qian Yuan (Overseas Chinese Hostel) and its culture of food and receptionshowing how these came to demonstrate the food and reception culture is essential to the formation of citizenship and nationalism, respectively, to distance itself from the legacy of Japanese colonialism, to project itself as project itself as being at the forefront of the struggle against Communism and 'Rissian' expansionism and, at the same time, to make the 'genuine China' to be tasted.
