飲食評估工具可以幫助營養師和個人了解自我飲食習慣和行為,從而改善自我的身體狀況,同時降低罹患飲食相關疾病的風險。24小時飲食回憶法、飲食記錄法和飲食頻率問卷等是基礎的營養評估工具,傳統飲食評估工具的侷限性使研究人員更難正確蒐集飲食攝取量資料。智慧型手機健康及飲食評估相關應用程式(application,APP)及人工智能(artificial intelligence,AI)營養分析的出現可能克服與傳統方法相關的許多限制。使用者可自行在手機或平板下載APP,輸入食物攝取種類及攝取份量,系統幫助計算出熱量與營養素。AI營養分析甚至可識別食物圖片計算出每餐的熱量與營養素,使個人監控飲食變得更加容易,同時也減輕營養師蒐集個人飲食攝取內容及份量的負擔,效度也經過研究驗證與營養師估算營養素有良好的一致性。然而,融入或應用AI系統評估營養素也是未來營養師工作型態轉變需迎接的挑戰。

Dietary assessment tools can assist dietitians and individuals in understanding their own dietary habits and eating behaviors, thereby improving individuals' overall health and reducing the risk of diet-related diseases. Basic dietary assessment tools include 24-hour dietary recall, dietary records, and food frequency questionnaires. The limitations of traditional dietary assessment tools make it difficult for researchers to accurately collect dietary intake data. The emergence of smartphone healthy and dietary applications and artificial intelligence (AI)-powered nutrition analyses may help overcome many of the limitations associated with traditional dietary assessment methods. Users can download these applications on their smartphones or tablets and input the types and portions of food consumed, and the system can automatically calculate calories and nutrients accordingly. AI-powered nutrition applications can even identify food images and estimate the calorie and nutrient contents of each meal. The development of these tools can make personal dietary monitoring easier and reduce the burden on dietitians with regard to the collection of information on individual dietary intake and portions. Additionally, these tools have been validated through research and show good consistency with dietitians' estimates of nutrient intake. Integrating or applying AI systems for dietary assessments in nutrition counseling presents a challenge for dietitians as part of their evolving work practices in the future.
