大學校園學生餐廳經營管理的探討以王騰公司爲例

摘要


過往大學校園學生餐廳相關研究,大都是單一大學校園學生餐廳設計、印象、顧客價值、服務品質與滿意度之相關碩士論文研究,卻是沒有從大學校園學生餐廳整體類美食廣場的企業經營考量與探究。因此,本研究就是要以整體類美食廣場的企業經營考量,探究大學校園學生餐廳的現狀與發展並進而提出符合大學校園學生餐廳需求,和具體完善營運管理計畫相關的建議。 考量大學校園學生餐廳,既是餐飲業又是美食廣場的本質,研究者不禁想到非常仰賴原本校園與所處環境,進而發展提供產品、服務、活動、場域完整體驗的多元利關係者,是否可以透過相關研究而能夠明白研究範圍與界定: 大學校園學生餐廳面臨什麼樣的情況又該如何的發展? 大學校園學生餐廳的核心內涵是什麼? 大學校園學生餐廳核心內涵的重要性? 大學校園學生餐廳現在到底是如何的被評估? 大學校園學生餐廳現在又該如何做才能有專業的發展?

In the past, the research on the student and restaurant of the university campus was mostly related to the master's thesis research on the design, impression, customer value, service quality and satisfaction of the single university campus. However, there was no enterprise management consideration and exploration from the overall food court of the university campus student restaurant. Therefore, this study is to explore the current situation and development of the student restaurant on the university campus with the consideration of the enterprise management of the overall food court. It is to propose the relevant recommendations for the student restaurant on the university campus and the specific improvement of the operation management plan. Considering the essence of student restaurant on the university campus is related to the catering industry and the food plaza, the researcher can not help but think the student restauran’s relying on the nature of campus environment, and then it is developing a multi-profit relationship that provides products, services, activities, and complete experience of the field. As a result, the purpose of this study is to question whether the stakeholders of the student restaurant on the university campus with the assistance of relevant studies can understand the following scope of research including: What kind of situation does the student restaurant on the university campus have to face and how should it develop? What is the core connotation of the student restaurant on university campus? The importance of the core content of the student restaurant on university campus? How the operation of the student restaurant on university campus can be assessed now? What should the student restaurant on university campus do now in order to have professional development?
