The purpose of this study is to estimate the properties of pulp from testing the residual alkaline of cooking waste by electrochemical instruments. The pH meter was used to measure the pH value and the potential difference from cooking waste and its dilution. The conductivity of cooking waste was tested by conductrometer. The total yield, kappa number, lignin content, and viscosity of pulps can be evaluated as measuring the conductivity of cooking waste with conductrometer. Most of the coefficients of determination from conductrometer are above 0.90.
