市售麵包及糕餅類食品中丙酸鹽類含量之調查研究

摘要


本調查研究乃在測定麵包類與糕餅類食品中丙酸鹽類之含量,核對其含量是否符合食品添加物含量標準。樣品由台灣地區價購,並區分為北、中、南、東等四區,樣品總數200件,其結果顯示丙酸鹽類含量均符合該標準之規定。

The investigation aims on determination of propionates concentration of breads and bakery foods, monitoring if the propionates residue are within the regulatory limitation of Food Additives. Samples are purchased all over the Taiwan area, subdivided into four parts, namely northern, central, southern and eastern parts, The results of total quantity of 200 samples show the propionates residue are all within the regulatory limitation of Food Additives.
