In order to understand the condition and the quality control of vinegar manufacture, 35 vinegar factories all over the Taiwan area were surveyed. The survey showed that there were 17 Vinegar by Fermentation factories and 18 artificial vinegar factories, among them eight factories manufactured vinegar by both methods. All were small factories except two Vinegar by Fermentation factories and one artificial vinegar factory. Seventy-eight samples were examined. The results showed that 12 of the 17 samples of Vinegar by Fermentation and all of the 29 samples of artificial vinegar didn't meet the national standards. The main raw material of artifical vinegar was glacial acetic acid and 20 of the 26 glacial acetic and samples failed to meet the hygienic standard of food additions.
