Hygienic Investigation on the Sugar and Salt Soaked Fruits in the Markets

In an attempt to investigate the additives of sugar and salt soaked fruits 400 samples were purchased and analyzed. Artificial sweeteners, coloring agents and preservatives were analyzed by paper chromatography, thin layer chromatography qualitatively and gas chromatography quantitatively. Artifical sweeteners were detected in 193 sample (48.3%). coloring agents were detected in 42 samples (10.5%). Preservatives was detected in 30 sample (7.5%) and one sample was found to contain bleaching agents (0.25%).
