100 samples including 88 Kamaboko and 12 chikwwa were collected in Taiwan area and analyzed for preservatives. The results were as followa ① 20 samples including 16 Kamaboko and 4 chikuwa were found to contain nonpermitted preservative, ben 20ic acid; together with permitted preservative, sorbic acid, at allowed level. ②55 samples were found to contain permitted preservative, sorbic acid, and the amountadded mit the allowed level. ③ The remaining 25 samples did not cantain detectable amount of presenatives.
