台灣中部地區市售切片水果之衛生調查

Sanitary Survey on Marketed Slice Fruits in Central Taiwan

摘要


本調查自民國79年9月至80年5月,在台灣中部地區八縣市之超級市場及傳統市場、夜市、車站戲院附近之攤販,抽購切片水果150件,依據中國國家標準方法檢驗生菌數、大腸桿菌及金黃色葡萄球菌,結果:生菌數一項不符規定者有56件(佔37.3%),大腸桿菌及金黃色葡萄球菌則均未檢出。其中於超級市場抽購之79件,生菌數不符規定者有38件;於攤販抽購之71件不符規定者18件。而在數種切片水果中,以木瓜的生菌數檢出率最高,抽購5件均不合衛生標準。另依據衛生署合告的方法,檢驗漂白劑(二氧化硫)殘留量,結果150件檢體均未檢出。

A total of 150 slice fruits purchased from super-markets and street stands were examined to determine the total plate count, Escherichia coli, Staphylococcus aureus and the residue (SO2) of Bleaching Agents. The result indicated that 56 samples (37.3%) failed to meet the total plate count hygienic standard, but E.coli and Staphylococcus aureus were not found in all samples. 38 out of 79 samples from super-market and 18 out of 71 samples from street stand were failed to meet the hygienic stand. The results indicated a much higher occurence of total plate count in papaya than the other slice fruits, all samples of papaya failed to meet the hygienic standard. The residue (SO2) of Bleaching Agent was not detected in those 150 samples.
