市售具營養宣稱之包裝食品中膳食纖維含量之調查

Survey of Total Dietary Fiber in Claimed Nutritional Packed Foods

摘要


民國八十七年十二月至八十八年四月間,於台北地區超級市場及商店,價購包裝完整且明顯標示具高纖或含膳食纖維之不同品名食品,共計100件,包括國產品52件及進口品48件,以AOAC酵素-重量法進行總膳食纖維含量之測定。調查結果,乳品類5件含量範圍為0.89~3.17%;果凍類18件含量範圍為未檢出~1.39%;配方營養食品15件含量範圍為0.60~95.69%;飲料類10件含量範圍為未檢出~46.43%;穀類21件含量範圍為1.45~15.57%;種子類5件含量範圍為2.06~27.61%;蜜餞類5件含量範圍為3.64~18.32%;澱粉類5件含量範圍為5.71~31.07%;糕餅點心類16件含量範圍為3.06~16.33%。標示有膳食纖維含量之檢體共37件,其中檢出值為標示量之90~110%有3件,80~120%有6件,70~130%有12件。本計畫執行時尚未達營養標示實施之期限,本計畫檢視結果僅供行政管理參考。

From December 1998 to April 1999, a total of 100 samples of claimed nutritional packed foods were tested for total dietary fiber. Total samples consisted of 5 dairy products, 18 fruit jelly, 15 formulated nutrition foods, 10 beverages, 21 cereals, 5 seeds, 5 preserves, 5 starch products and 16 snacks. The results showed that the range of total dietary fiber contents in dairy products were 0.89-3.17%, fruit jelly were ND-1.39%, formulated nutrition foods were 0.60-95.69%, beverages were ND-46.43%, cereals were 1.45-15.57%, seeds were 2.06-27.61%, preserves were 3.64-18.32%, starch products were 5.71-31.07%, and snacks were 3.06-16.33%.
