A survey on 3-monochloro-1, 2-propandiol (3-MCPD) content in soy sauce products in Taiwan was conducted during fiscal year 2003 for realizing the distributions of 3-MCPD. Thirty-nine samples of soy sauce products were sampled from manufacturers or retail outlets by the local health bureaus in thirteen cities and counties. The samples were analyzed by using GC/MS method (detection limit 0.01 ppm) that was validated and promulgated by the Department of Health to chck for compliance with the regulatory limit for 3-MCPD. The result showed that 32 samples of domestic soy sauce were ND and 7 samples of domestic soy sauce contained 3-MCPD with concentrations in the range of 0.01 to 0.1ppm. All of the samples were found to comply with the regulatory limit for 3-MCPD. The concentration level was also found to have a significant decrease in comparison to the survey result in 2002 and 2000.
