植物可藉由吸收環境中過量之金屬元素,造成生物性累積。為了解國內市售蔬菜類重金屬含量之背景資料,及配合行政院衛生署逐年訂定國人食用農作物中重金屬限量標準之需求,本研究建立蔬菜類中重金屬之分析方法,於民國96年3月至10月間,自台北地區各生鮮超市及傳統市場採購市售蔬菜類檢體130件,包括包葉菜類15件,小葉菜類30件,莖菜類30件,果菜類35件及瓜菜類20件,進行重金屬含量背景值之檢驗分析。本研究以石墨熱板消化法分解消化檢體後,利用感應耦合電漿質譜儀定量檢體中之鈷(Co)、砷(As)、硒(Se)、鉬(Mo)、鎘(Cd)、銻(Sb)及鉛(Pb)元素。經以標準參考物質確認方法後,將此方法應用於所抽樣130件蔬菜類檢體,檢體重金屬之中位數值範圍分別為鈷:0.001~0.015μg/g,砷:0.001~0.014μg/g,硒:0.001~0.008μg/g,鉬:N.D.~0.067μg/g,鎘:N.D.~0.026μg/g,銻:未檢出,鉛:N.D.~0.005μg/g。其中鎘、鉛之檢驗結果均符合聯合國糧農組織/世界衛生組織之食品標準委員會(FAO/WHO Codex Alimentarius Commission, Codex)及歐盟法規委員會(European Regulation Commission)對蔬菜類中鎘、鉛之限量標準。
In order to survey the contents of heavy metals, including Co, As, Se, Mo, Cd, Sb and Pb, in the marketed vegetables for further setting the tolerance limit of heavy metals by the Department of Health of Executive Yuan, 130 vegetable samples were collected from the markets and analyzed from Mar. to Oct. 2007 in Taiwan. The samples, including Brassica vegetables (15), leaf vegetables (30), stalk and stem vegetables (30), fruit vegetables (35) and melon vegetables (20), were digested in a graphite block digester and analyzed using an inductively coupled plasma-mass spectrometer (ICP-MS) for quantification. The method was evaluated by using the certified reference materials. The median value ranges of Co, As, Se, Mo, Cd, Sb and Pb in vegetable samples were shown 0.001~0.015μg/g, 0.001~0.014μg/g, 0.001~0.008μg/g, N.D.~0.067μg/g, N.D.~0.026μg/g, N.D. and N.D.~0.005μg/g, respectively. The levels of Cd and Pb in vegetable samples were all below the maximum levels set by FAO/WHO Codex Alimentarius and European Regulation Commission.
