桃園區農產加值打樣諮詢服務樣態之研究

為瞭解北部地區初級加工之打樣需求，以及提高桃園區農產加值打樣中心服務品質，本研究針對2020至2021年之260件「打樣諮詢」服務案件進行描述型及關聯性卡方檢定分析。研究結果顯示，「打樣諮詢」服務申請者以居住於桃園市及新竹縣者居多，主要的諮詢方式以現場諮詢為主；種植作物種類以特用作物、蔬菜、果樹居多；58.8%申請者具有加工經驗；詢問度最高之服務為「食品加工技術諮詢」。後續有80.4%申請者有繼續申請「打樣作業」服務之意願；打樣類型以乾燥案件數最多；特用作物常見打樣產品為乾燥、切割成大片段包裝於茶包當中；蔬菜作物常見打樣產品為乾燥、粉碎成粉狀原料製作成烘焙產品。由於特用作物及蔬菜作物有較高之加工需求，後續研究人員擬針對此進行更深入原料特性及加工技術之開發研究，以提升整體服務品質。

In order to understand the needs of primary processing in the northern region, and improve the service quality of Taoyuan district rapid prototyping center for value added agricultural products, the research analyzes the data of 260 application case reports from 2020 to 2021, and conducted descriptive statistics and correlation Pearson's chi-squared test. The results showed that most applicants live in Taoyuan city and Hsinchu county. Applicants prefer to apply consulting service in person. The most frequently cultivated plants were special crops, vegetables, and fruits. 58.8% of the applicants had processing experience. The highest asked service was food processing technology consulting. Subsequently, 80.4% of the applicants continued to apply for prototyping services. The largest number of prototyping case was drying processing technology. Special crops were usually cutting dried products into segments and package in tea bags. Vegetable crops were usually pulverized dried products into powder, and used in bakery products. As special crops and vegetable crops have high processing requirements, researchers can conduct more in-depth research on raw material characteristics and processing technology to improve the overall service quality.
