Observation on Dietary Protein Utilization in Vegetarians

素食者對植物蛋白食物利用之觀察

摘要


本試驗係以二系列實驗進行,研究素食之尼姑與混食之女性對高植物蛋白食物及低植物蛋白食物之利用率有何不同。由胺基酸利用之研究顯示:素食者之腸胃道,對於高植物蛋白及低植物蛋白之利用率均比混食者爲稍高。在高植物蛋白及低植物蛋白食物的氮平衡實驗中,顯示素食者對氮之攝取量雖較低,但其氮平衡之正值仍較混食者爲高,或其負値較低。至於兩組尿中肌酸酐的排洩量而論,則以混食組者爲較高。

Physiol., 21(3): 143-150, 1973.-Two series of experiments were performed to study the utilization of low and high vegetable protein diets on female vegetarians and female mixed diet subjects. Results from amino acid availability showed that vegetarians could utilize the ingested vegetable protein slightly more efficiently than the mixed diet subjects in the gastrointestinal tract during both low protein and high protein periods. The nitrogen balance studies indicated that although the vegetarians had less nitrogen intakes, they were either more positively or less negatively balanced as compared with the mixed diet subjects in protein supplemented and low protein intake periods respectively. The mixed diet subjects showed higher urinary creatinine excretion.
