米粒外觀與胴割粒率間相關性之探討

摘要


爲瞭解水稻胴割粒率在各類型品種間之差異,及進一步探討米粒外觀與胴割粒率間之相關性,以提供良質米品種之選育及實施稻米品質分級產銷時之參考。利用引自日本及本省育成之稉稻、國內外秈稻及大粒型稻等各類型水稻品種,共計35個爲供試材料。在栽培管理與收穫調製齊一之條件下,調查品種間胴割粒率之差異性。初步結果顯示,各類型水稻品種之胴割粒率,以大粒型品種之42.89%爲最高,次爲引自日本及本省育成之梗稻品種平均爲29.21%與26.57%。而以長粒型秈稻品種爲最低僅1.79%。顯示胴割粒率除在不同類型水稻間有顯著差異外,在同類型不同品種間亦有極顯著之差異存在。導致水稻胴割粒率在各類型品種間發生顯著差異之主要原因,似與粒形的長短大小與心腹白有無等米粒外觀性狀有關。粒形愈肥大,且心腹白面積愈大者,其胴割粒之發生率亦愈高。

The variation of cracked kernel rate (CKR) in thirty-five rice varieties and its relation to grain appearance were studied for further grading of rice quality and variety selection. Great diversity of CKR was identified in evaluated rice varieties. The average CKR was recorded as 42.89% in varieties with large grain and followed by two grops of Japonica type (26.56% and 29.21%, respectively). The CKR of long-grain Indica type was only 1.79%. The results appear that large differences of CKR existed among varieties either between two types or within type. Further studies indicated that the coefficients of correlation between grain shape and CKR were -0.3562 (kernel length), 0.7011** (kernel width) and 0.6256** (kernel thickness), respectively. It implies that greater grain size and chalkiness area are related to higher CKR and they may be indexes for selection ol high grain quality rice variety.
