稻穀平衡相對濕度物性影響因子之研究

Studies of Effect Factors on Equilibrium Relative Humidity of Rice Products

摘要


此研究中量測在五個溫度範圍下兩品種稻穀,糙米與白米之平衡相對濕度之物性。三種穀物產品之適稱ERH模式參數值均列舉於此研究中。研究結果顯示稻穀具有遲滯性質,但其數值皆低於1.0%。樣本乾燥處理溫度的影響則十分顯著。研究結果與文獻資料比較可知測定方法,測定方法,測定人員技術與測定品種對稻穀,糙米與白米ERH物性並無顯著之影響,由此證實建立汎用穀物ERH模式的可行性。

The equilibrium relative humidity of rough rice, brown rice and white rice were measured at temperatures ranging from 5 to 50℃. The adequate ERH model and its estimated parameters were showed in this study. Hysteresis effect could be found for the ERH properties of rough rice, however, the differences of moisture content between desorption and adsorption were within 1.0%. The treatment temperatures of the sample had the significant effect. Comparing the results of this research with the previously published data, the effect of the determinating method, techniques and grain varieties did not affected the ERH properties. It is availables to estiablish the universal ERH model of rough rice and its products.
