食用海藻類的化學組成之研究—Ⅰ.海菜的採收時期對一般成分與無機成分之影響

摘要


1.澎湖縣的後寮、鎮海(專業區),沙港、馬公(天然産區)四個地區在1976年1月至4月所出産的海菜,測定其化學組成的結果,以乾物中的百分比表示,則一般成分之全醣含量為20.54~38.63%,粗灰分為12.27~25.73%,粗蛋白在16.54%以下,粗纖維為3.05~6.67%,粗脂肪在1%以下。 2.在生長旺盛的2、3月,粗蛋白含量達最高,而粗灰分及粗纖維含量則呈較低情形,全醣含量則在4月呈最高的現象,故一般成分含量的變化,受生長時期的影響很大,而與地域性的關係則不明顯。 3.無機成分的含量,SO4為13.69~30.25%是特異的現象,Na為0.52~6.9%,K為0.39~2.25%,Mg為0.42~4.58%,Ca為0.17~2.21%,Fe為0.09~0.54%,P為0.29~1.02%,Zn為30~126ppm,Cu為2~30ppm,I為200~692ppm。 4.大部份的無機成分,都在海菜生長旺盛的2、3月含量達最高,但少數成分含量的變化略受生長季節性因素之影響,惟較不明顯。

Studies on the chemical composition of Monostroma latissimum indicated that, on a dry-weight basis, the content of carbohydrate is 20.54-38.63%, crude ash is 12.27-25.73%, crude fibre is 3.05-6.67%, crude fat is below 1% and crude protein is below 16.54%. The content of inorganic constituents showed SO4, 13.69-30.25%; Na, 0.52-6.9%; K, 0.39-2.25%; Mg, 0.42-4.58%; Ca, 0.17-2.21%; Fe, 0.09-0.54%; P, 0.29-1.02%; Zn, 30-126ppm; Cu, 2-30ppm; I, 200-692ppm. The content of ash and crude fibre decreased in February or March, but the crude protein increased in these two months. Therefore, the chemical composition changed with time of harvest. However, it is independent of the origin of harvest. Most of the inorganic constituents increased in February or March, the time for propagation of Monostroma. Some inorganic constituents showed a decrease in these two months. However, it varied with the origin of harvest and the trend was not very clear. Therefore, the inorganic constituents were not greatly affected by the seasonal changes.
