東港沿岸草蝦(Penaeus monodon)筋肉中可溶性抽出物的季節變化

Seasonal Variations of Extractive Components of Wild Grass Prawn,Penaeus Monodon,in Tungkang Area

摘要


本試驗將臺灣養殖的草蝦(Penaeus monodon)、斑節蝦(P.japonicus)、紅尾蝦(P.peni-cillatus)以及砂蝦(Metapenaeus ensis),在同一養殖條件下馴養,以比較不同蝦種之筋肉中,其可溶性抽出物成分的差異,獲得如下之結果:1.草蝦、砂蝦的glycine含量比斑節蝦、紅尾蝦爲多,但是,皆比天然蝦爲少。四種蝦的arginine則大致相同。紅尾蝦的proline含量非常高,約爲砂蝦的二倍,且比天然蝦爲多。斑節蝦的taurine含量,比其他三種蝦爲多,但較天然蝦爲少。2.斑節蝦的:TMAO含量高於其他三種蝦,而以砂蝦最少,約爲斑節蝦的三分之一。 Glycinebetaine的量以斑節蝦及砂蝦較多。Quaternary ammonium bases則以斑節蝦最多。3.在核酸及關連物質中以IMP及AMP爲主。其中斑節蝦的AMP含量高於其他三種蝦,但IMP之含量則最少。4.在無機成分中,K(superscript +),Na(superscript +),Cl(superscript -)的含量,四種蝦大致相同,但是PO(superscript 3-)4 則以紅尾蝦含量最多。5.此四種蝦的可溶性抽出物組成,雌雄之間並無明顯的差異。

The contents of muscular tissue extracts of four penaeid prawn species undera similar aquaculture condition were compared in this study.The four penaeidprawn species included Penaeus monodon,P.japonicus,P.penicillatus,and Metapenaeusensis,which are commonly cultured in Taiwan.This study showed that glycine contents in P.monodon and M.ensis werehigher than those in the other two species.However,when compared with thespecies caught from the wild,content of glycine in these 4 cultured species werelower.Arginine content in each of the 4 species were similar.Proline contentin P.penicillatus was very high,with about twice as much as the content in M.ensis,and was even higher compared with the P.penicillatus caught from thewild.Taurine content in P.japonicus was higher than those in the other 3species,but was lower compared with the same species caught from the wild.P.japonicus had the highest TMAO content among the species,while M.ensishad the lowest.TMAO content in M.ensis was only one-third of that of P.japonicus.Contents of glycine betaine in P.japonicus and M.ensis were higherthan those in the other two species.P.japonicus also contained the highestamount of quaternary ammonium bases among the species.The major nucleotides and related compounds found were IMP and AMP.Again,P.japonicus had the highest AMP content.However,this species containedthe lowest amount of IMP.Contents of K(superscript +),Na(superscript +),and Cl(superscript -),in each of the 4 species were similar.However,P.penicillatus contained the highest amount of PO(superscript 3-)4.There was no significant difference in composition of extractive componentsbetween the male and female penaeid prawn species.
