美洲河鯰稚魚(5-8克)以4%之三甘油硬脂酸、鲶魚油、鯡魚油以及(1/1,w/w)之鲶魚油及鯡魚油各配成4種飼育飼料餵飼於26℃。經過8週後,鯰魚之肝臟和鰓之中性脂質含量未因攝取之飼料脂質來源不同而有顯著差異。水溫會影響鲶魚此二組織中性脂質之含量;當溫度降至15℃經過2週之飼育,中性脂質在此二種組織中的含量亦未因所攝食之脂質源不同而有所改變,與26℃比較其含量並無差異。俟水溫降至10℃經過2週之餵飼,其中性脂質在肝及鰓中之含量皆顯著下降。再經過4℃2週,中性脂質在此二組織之含量皆與在10℃中之含量無顯著差異。此一趨勢未因飼料中之脂肪酸來源不同而有所差異。在脂肪酸組成方面,無論肝或鰓中其中性脂質皆能反應飼料中脂肪酸之組成;中性脂質之不飽和度在15℃時比26℃高,但當水溫降至10℃以及4℃其中性脂質不飽和度又再降低而與在26℃時相同;此由於其中性脂質中高含量的單價n-9族不飽和脂肪酸有調節其不飽和度的作用。常溫下,飼料中的必需脂肪酸經吸收代謝後轉成極性脂質,大多數以磷脂質狀態出現,多餘的必需脂肪酸乃儲存於中性脂質中;因此中性脂質在鲶魚體內,除了在低溫下有調節能量之供需外,尚有提供磷脂質必需脂肪酸的緩衝作用。

Juvenile channel catfish,Ictalurus punctatus,were fed four different diets,with 4%lipid sources,which were tristearin,catfish oil,menhaden oil and a(1/1,w/w)mixtureof catfish oil and menhaden oil,at 26℃ for 8 weeks.The contents of neutral lipid inboth liver and gill showed no significant differences among the four dietary treatmentsand remained at the same level after exposure to 15℃ for 2 weeks,decreased after a2 week exposure to 10℃,and remained at about the same level as at 10℃ after 2 weeksexposure to 4℃.Fatty acid composition of neutral lipid reflected that of the dietary source.Increased levels of fatty acid unsaturation of neutral lipid in both liver and gill tissueoccurred at 15℃ for all dietary treatments.However,at 10℃ and 4℃,the unsaturationlevel of fatty acid returned to a level similar to that at 26℃.Monoenes of n-9 fattyacid family played an important role in the regulation of fatty acid unsaturation in theneutral lipid.Neutral lipid is an essential fatty acid pool and energy source functioningas a buffer system in which essential fatty acids can be accumulated at optimumtemperatures and withdrawn at sub-optimum low temperatures in the fatty acid metabolismof channel catfish.
