乾海參復水後之成分分析

Compositional Analyses of Dried Sea Cucumber Metriatyla scabra after Rehydration

摘要


本研究係以市售乾海參(黃光參:Metriatyla scabra)為材料,依常法復水,探討復水後之狀態,並檢測所含水分、醣類、脂質、蛋白質、灰分、膠原蛋白與胺基酸等各種成分之含量,以為加工利用之參考。結果顯示,以間歇性加熱法復水之乾海參,長度增加約4倍,重量增為約5倍。乾海參之基本組成以重量百分率計,水分3%、蛋白質88%、碳水化合物4%、脂質2%、灰分3%;復水後依次為95%、4%、0.2%、0.1%、0.1%。依水、鹼、酸、熱處理之順序分畫海參體壁中之膠原蛋白,含量分別為42%、6%、48%、2%,其中以水溶性(佔42%)及酸溶性(佔48%)者居多,合佔總量之90%;前四種溶解性之膠原蛋白合併,其胺基酸組成(m mole/ml)為Glu,5,262、Gly 3,939、Ala 1,447、Pro 1,392、Cys 961、Hyp 766、Arg 725、Val 436、Leu 395、Thr 388、Ser 342、Lys 151。

The appearance and composition of dried sea cucumber Metriatyla scabra were determined after re-hydration. The weight increased 5-fold and the length 4-fold for the sea cucumber rehydrated by overlapping heat- and cool-treatment. The compositions of dried sea cucumber were: moisture 3%, protein 88%, carbohydrate 4%, lipid 2%, ash 3%; after rehydration they were 95%, 4%, 0.2%, 0.1%, 0.1%, respectively. Collagen, the principal component contained in body wall as protein, was fractionated into water soluble fraction (42% collagen), acid soluble fraction (48% collagen), alkali soluble fraction (6% collagen), and residual fraction (3% collagen). Both water and acid soluble collagen accounted for a major portion of collagen in sea cucumber. The total amino actd contents (m mole/mi) for four fractionations of collagen were Glu(5,262), Gly(3,939), Ala(1,447), Pro(1,392), Cys(961), Hyp (766), Arg(725), Val(436), Leu(395), Thr(388), Ser(342), Lys(151).
