烏腳病地區膳食營養之調查研究

Dietary Survey in the Endemic Blackfoot Disease Area

摘要


為明瞭營養狀況對罹患烏腳病的影響,以作為今後烏腳病地區營養改善方案之依據,著者等於六十四年七月間在台南縣學甲鎮,北門鄉以地段訪問方式進行膳食營養調查。訪視對象以衛生所登記有案的病患中抽樣160人,對照組則自病患同一村里、同性別、同年齡而無烏腳病者中抽樣,計180人。 兩組間飲用深水井的期間長短、從事的職業、婚姻狀況及教育程度等均無甚差別。惟以目前情況觀之,烏腳病患的經濟狀況比對照組為差。 營養素攝取方面,兩組均較台灣地區之平均攝取量為低;而病患組尤較對照組為差,其體位亦然,維生素A、B、C及鈣質等均不及建議量甚多,熱量攝取量偏低甚可能影響蛋白質之正常利用。 烏腳病地區居民對營養知識缺乏,其中較為偏僻地區之村里關於新鮮蔬果的供應往往不足,再加上經濟能力欠佳,遂形成該地區營養不良之狀況。

A dietary survey by 24-hour recall method was conducted in the endemic Blackfoot (BF) disease area-Hsieh-Chin, Pei-Men Townships of Taiwan, Taiwan-in July, 1975. In order to study the effect of nutriture in. BF disease area, the nutrient intake of 160 BF patients registered in local health stations were investigated and compared with that of 180 controls randomly selected from the same villages with corresponding sex and age groups. The results showed that there was no signiricant difference in the sources of drinking water, occupation, marital status and education background between these two groups. However, the BF subjects had poorer economic and nutritional status than the controls. The dietary pattern was simple and monotonous, usually consisted of rice, fish and limited amount of vegetables. The daily intakes of calories, vitamins A, B complex, C, and calcium were less than those of the rural average far Taiwan and much below the Chinese Recommended Daily Nutrient Allowances as well. Lack of nutrition knowledge, insufficient food availability in the remote villages and poor socioeconomic condition all appeared to contribute to the situation of undernutrition.
