工廠餐廳供膳情況調查

Feeding Condition of Factory Workers in Taiwan

摘要


勞力是工業生產基本要素,勞工有良好的飲食當可增加生產力。台灣正在迅速發展工業之中,故對工廠供膳狀況作一評估。於民國66年11~12月間,以「食物採購記錄」法,進行調查。其結果顯示營養供應上,較為不足者是維生素B2、鈣質和鐵質,建議增食蛋類、乳類、深綠色蔬菜和水果,員工用餐時間過於緊揍,部分廚房之衛生條件及設備差強人意,應設法改善。並建議大規模廠家聘用營養專業人員管理膳食供應,以求飲食營養及食品衛生之保障。

Labor force is fundamental to industry. Well-fed workers will increase the productivity. Taiwan being in the process of rapid industrialization, it is necessary to evaluate the food supply in factory cafeteria. A dietary survey was therefore conducted in 7 factories during November to December in 1977 by food procurement record method. The results revealed supplies of vitamin B2, calcium and iron were insufficient. Eggs, milk, green vegetables and fruits to be included in meals were strongly recommended. In addition, shortage of meal time and lack of qualified personnel trained in food service management were also observed.
