摘要

人口高齡化是世界性共同的趨勢，因此老人醫學和老人營養學是目前急切需要和發展的重點。
老人癡呆症是很普遍的存在老年人口中，其原因和發生的病症有很多。阿耳滋海默氏病是其中很重要的一種病症。阿耳滋海默氏病(Alzheimer's Disease) 是在西元1906年Dr. Alzheimer 所得出的疾病。對於它的致病原因到目前還是屬於混沌的狀態。其中飲食被認爲和阿耳滋海默氏病有病因學上和病理學上的關係，因此筆者收集了些歷史上有關營養學和阿耳滋海默氏病的重要論著，融貫敘述於後。
