中部專科學生對一般營養與西式速食營養之知識和態度的相關因素探討

Effects of Knowledge and Attitude on the Basic and Fast-food Nutrition in Junior College Students

摘要


本研究之目的旨在探討中部七所專科學校學生對一般營養與西式速食的營養知識和態度,並找出可能影響的相關變項。依學生在學期間所曾修習過營養知識的課程多寡,而將學生分為三類,即食營科、護理科及其他科(如商科、工科及體育科)共554名學生,經信度及效度測試後以結構式問卷以集體訪視的方式收集問卷。在填寫問卷的過程中,嚴禁同學彼此互相交談。經回收整理後,有效問卷519份,回收率為93.7%。 由研究結果中得知,影響學生在營養知識得分的因素包括是否在學校有接受營養知識的課程、性別及對速食的喜愛度;而影響學生營養態度得分的因素包括口味、對家庭飲食決策的參與度、內外控信念、對速食的喜愛度等。因此建議學校應提供有關營養的課程,讓一般未曾接受營養課程的同學選修,同時大眾傳播媒體亦應適時報導正確的速食營養訊息,以建立學生良好的營養態度及行為。

The objective of the study was to investigate knowledge and attitude of junior college students on the basic and fast food nutrition. Seven colleges of 554 students enrolled from six departments were classified into three Categories depending on nutrition courses they had in the college. Students were interviewed by a structured questionnaire. Results indicated that one fourth students prefered to eat fast food. Significant differences were found in eating fast food between the three categories of studients. Variables including students taste, decision of family diet, unfavorable fast food and personality related to the internal and external control were ststisticlly related to the basic attitude of nutrition. The attitude of fast food was statistically related to the residence of the student and the knowledge of fast food. These data suggest that the nutrition knowledge of the junior college students had highly correlated to their attitude on basic food and fast food.
