Identification and Growth Inhibition of CO2-Producing Yeasts from Gas-forming Soy Sauces

摘要


The swelling of plastic bottles containing soy sauce was caused by CO2-producing yeasts. Four yeast species were isolated from different soy sauces and identified to be Zygosaccharomyces bailii, Zygosaccharomyces rouxii, Candida mogii, and Candida etchellsii by morphological and physiological characteristics. Among the four species, z. bailii and Z. rouxii were isolated from soy sauce containing 14% NaCl, while C. mogii and C. etchellsii were isolated from low salt (below 11% NaCl) soy sauces. In a growth inhibition study, it was found that Z. bailii and Z. rouxii could grow in the presence of 1000 ppm sodium benzoat. Z. bailii could not grow in the presence of 50 ppm butyl p-hydroxybenzoate, while Z. rouxii could not grow at a butyl p-hydroxybenzoate concentration higher than 250 ppm; C. mogii and C. etchellsii could not grow in the presence of 600 ppm sodium benzoate or 150 ppm butyl phydroxybenzoat. The four species could not grow in a mixture containing 100 ppm each of sodium benzoate and butyl p-hydroxybenzoat. In a ethanol-tolerant study, it was found that Z. bailii, Z. rouxii, C. mogii, and C. etchellsii could not grow in the presence of 2.5%, 1.5%, 2.0%, and 3.0% ethanol, respectively.
