區域性變異對稻米品質影響之研究

摘要


本報告係探討水稻品種在花蓮縣主要稻米產區富里鄉之品質及食味之差異,試驗結果一、二期作稻穀產量梗稻以對照品種台農67號最高,台中189號及台南7號一期產量則接近台農67號,二期作則顯著低於對照,早熟品種產量均偏低,秈稻以台南秈15號產量高且穩定。就碾米品質之高白米率及優良米粒外貌而言,以高雄141號及台南7號為佳,台農67號及台中189號次之。品種米飯評價結果,以台中189號及高雄141號食味最佳,期作間亦穩定,桿高之吉野一號及桿細弱之越光二品種因容易發生倒伏,致其米飯食味不穩定。綜合本年期試驗結果就其農藝性狀,抗倒伏性,稻谷產量及碾米品質,米飯食味等之表現,一期作可推荐栽培台中189號取代易罹稻熱病之台農67號,可收提高稻米品質及米飯食味之效果,並兼顧產量之目的,二期作可推荐栽培高雄141號,惟其屬早熟稻,產量偏低。

This report summarized the response and difference on rice quality of cultivars crltivated in Hualien area. A total of ten rice varieties were tested. Results indicated that Tainung 67 showed the highest yield in both crops among Japonica rice, whereas Taichung 189 and Tainan 7 only showed better yield in 1st crop. The grain yield were low for three early maturity cultivars. The grain yield of Tainan sen 15 (Indica rice) was also quite high and stable. Cultivar of Kaohsiung 141 and Tainan 7 possessed high milling recovery and good grain appearance. Following are the Taichung 189 and Tainung 67. The results of palatability evaluation on cooked rice indicated that Taichung 189, Kaohsiung 141 tasted good and stable. But the taste was unstable for the cultiver Chiye 1 and Koshihikari due to lodged easily for their tall and weak culms. The results integrated from the experiment we suggested that cultivar Taichung 189 can be cultivated in the 1st crop for replacing Tainung 67 in Hualien area for its superior eating quality and acceptable grain yield, Kaohsiung 141 for 2nd crop, but grain yield was relatively low for it's early maturity.
