採收時間及遮陰對芥藍菜(Brassica oleracea L.)氮組成及硝酸還原酵素活性的影響

摘要


硝酸態氮是植物從土壤中吸收主要的氮形態之一,但若食用硝酸態氮累積過多之蔬菜則對人體有害,臺灣地區芥藍菜消費量甚大,故其可食部位硝酸態氮濃度值得吾人重視。本試驗以水耕栽培芥藍菜,探討氮形態之日週期變化及各部位之硝酸還原酵素活性與硝酸態氮之關係。以含有7mMNO3-與1mMNH4+之水耕液栽培芥藍菜之結果顯示,全株葉片、葉柄,莖與根部之還原態氮濃度隨採收時間及遮陰處理均無顯著之變化,停用硝酸態氮處理可降低芥藍菜各部位之硝酸態氮濃度,葉片中硝酸還原酵素活性約為葉柄及莖中之十倍,硝酸態氮濃度約為葉柄及莖之二分之一。

Nitrate is the major nutrient form of nitrogen absorbed by plant from soil. It was reported that high nitrate level in the leaves of leafy vegetables may be harmful to human health, thus it was concerned to be very important on the nitrate level of leaves of kale for their large amount of consumption in Taiwan. The object of the study was to investigate the effect of sampling time and shading on the nitrate concentration and nitrate reductase activity of the shoot of kale by solution culture. There were no significant effect of sampling time and shading on reduced nitrogen level of the leaf, petiole, stem and root of kale in solution culture with 7mM NO3^-and 1mM NH4^+ as its N-source. Stopping supplying nitrate gradually decreased the nitrate level of the kale. The nitrate concentration of fresh leaf was the half of the of petiole and stem, however, nitrate reductase activity of leaves was ten times of that of petiole and stem.
