花蓮縣不同地區稻米品質與產量分析研究

District Difference of Rice Quality and Yield in Hualien County

摘要


本試驗以2004年二期作至2006年一期作農糧署於花蓮縣各鄉鎮產量坪割調查之稻米為基準,針對花蓮地區稻米品質與產量進行分析,以期作為將來調整水稻栽培措施,提高稻米品質之參考。結果顯示,在不同期作表現上,不同品種之白米食味值及白米蛋白質含量表現皆以2005年一期作最佳,分別為76.72及4.97%,白米味度值則以2004年二期作最高達58.76,在產量上則以2005年一期作最高達6032公斤/公頃。在各期作不同栽培品種之比較上,白米食味值於2004年二期作及2005年一期作無顯著差異,但在2005年二期作以台稉4號與高雄139號為最高分別達73.33、72.83,在2006年一期作則以台稉16號為最高,達73.14;而產量比較上,以台稉4號在2004年二期作最高為6214公斤/公頃,2005年一期作則以台稉2號最低為5265公斤/公頃,2005年二期作及2006年一期作則無顯著差異。另外,在不同稻米主要生產地區比較上,2004年二期作、2005年一期作及2005年二期作各地區白米食味值無顯著差異,2006年一期作以富里鄉之白米食味值最高為71.39,而在產量比較上,除2005年二期作以玉里鎮與富里鄉較好,其餘各期作產量皆無顯著差異。在稻米品質分析各項目間關係之檢定上,2004年二期作至2006年一期作所有樣品之糙米及白米食味值與蛋白質含量相關係數皆高於0.9且都為負相關,白米食味值與白米味度值之相關係數為0.67正相關;而每期作中,抽驗點之產量高低與其白米食味值之相關性則極低。

To enhance the rice quality and adjust the rice cultivated system in Hualien County, the rice samples from Eastern Region Branch, Agriculture and Food Agency had been analyzed from the second crop of 2004 to the first crop of 2006. The results showed that the palatability value of milled rice, protein of rice, and grain yield in the first crop of 2005 was better than other crops. Between cultivars, Taikeng No. 4 and Kaohsiung No. 139 were the best two in palatability value of milled rice in the second crop of 2005, and Taikeng No. 16 was the best in the first crop of 2006. In the grain yield, Taikeng No. 4 yielded highest in the second crop of 2004 with 6214 kg/ha, but Taikeng No. 2 yielded lowest in the first crop of 2005. Quality of rice produced in Fu-li township was supposed the best, but there was no significant difference among townships in the palatability value of milled rice from the second crop of 2004 to the second crop of 2005. Finally, the palatability value of milled and brown rice negatively correlated with percentage of protein of rice, but the palatability value and taste value of rice positively correlated in all crops. In all crops, the correlation of the palatability of milled rice and the grain yield was very low.
