As a scholar in Northern Song Dynasty, Huang Tingjian's Simmering Tea Fu is the only tea Fu, among the others, that discusses the sensory evaluation of famous tea in Song Dynasty. It is also a Fu that instructs how to simmer and brew a good cup of tea. However, people at that time mistakenly referred to it as ”simmering Chinese herbs” since simmering is not the traditional tea-making method. The misunderstanding is worth a study on its cultural significance. This study tries to provide reasonable explanations for the different versions and the ambiguous content of the Fu in order to further confirm its value in tea culture.
