高職輪調班餐旅科學生工作有關之肌肉骨骼不適之調查

摘要


本研究主要探討高職輪調班餐旅科學生在職場工作肌肉骨骼不適之情形。本研究以高雄市高職設有餐旅科輪調班學生為研究對象,採用橫斷式、結構性,不記名問卷填寫方式進行。問卷共發放550份,回收540份,有效問卷523份,回收率為95.1%。結果顯示:(1)有82.2%的學生在職場上發生過傷害;三年級學生發生職場傷害高於一年級,危險值為2.02;在「餐飲內場」工作的學生比起「餐飲外場」發生職傷害高達2.57倍;有疾病者發生職傷害也比健康者高,危險值為3.32。(2)工作姿勢方面,房務部工作者其「彎腰操作」「重複性動作」「手腕經常旋轉」「手腕經常彎曲且用力」高於其他工作型態;餐飲內場以「抓握、檢取細小材料」高於其他工作型態。(3)骨骼肌肉不適以「下背」、「手腕」、「肩膀」居多;男生不適低於女生;房務部有較高的「下背及腰部」不適。 本研究結果提供學校、職場主管或相關單位在安排課程或職場教育時之參考依據,促使降低學生肌肉骨骼不適之問題。

The main purpose of this study was to investigate work-related musculoskeletal problems among rotary hospitality industries of a vocational high school of Southern Kaohsiung, in southern Taiwan. Methodologically, a corss-sectional survey with a structured, self-administrated questionnaire was implemented for this study. A 95.1% response rate was received, from the five hundred fifty questionnaires sent out. Data was analyzed by descriptive and inferential statistics. The result showed: (1) Eighty two point two percent of adolescents had occupational injuries.(2) In comparison to workers of other departments, housekeepers had higher rate of workplace injuries related to postures. These postures include back bending, repetitive movements, twisting or turning of the wrist, and overexertion when in those postures. Workers in the kitchen experienced more problems from the motions of ”holding up” and ”picking up of small subjects,” than workers in other departments. (3) Majority of the work-related musculoskeletal problems were related to areas of the「lower back」、「wrist」、 and「shoulder」. Females had higher incidence of problems than males. Housekeepers had more「lower back」disorders。 The results of this study will provide information for school and occupational managers to better understand work-related musculoskeletal problems in workplace, and to help reduce occupational injuries.
