職場減重班之飲食日誌成效評估

Evaluation of the Effect of Diet Diary Used in the Work-place Weight-Reduction Program

目的:瞭解職場減重班之推行成效,並探討飲食日誌介入對於減重之影響。方法:本研究以63位身體質量指數(body mass index, BMI)大於24的職場工作者為受試對象。課程進行前,實施飲食問卷及身體評量,全部課程共計12週。前4週所有受測者參加營餋教育課程,後8週將受測者分成AB兩組,A組無填寫飲食日誌,B組填寫飲食日誌。課後進行身體評量,比較減重前後體重及BMI的變化。結果:近七成受測者10週之中低於(含)5週達建議運動量;約大成受測者,工作中坐著時間較走動時間長。大部份受測者(95.3%)高油脂食物進食狀況評分為好及良好,但有超過七成受測者飲食行為及烹調方式欠佳。比較課程前後體重及BMI,A組平均減少1.4公斤(1.95%)及0.4(1.47%);B組平均減少3.6公斤(4.63%)及1.3(4.56%)。結論:職場減重班推行營養教育課程可降低參與者體重,而合併飲食日誌介入的減重模式展現更佳減重成效。

Objectives: The aims of this research were to explore the effect of a workplace weight-reduction program and to identify the influence of using a diet diary on weight loss in overweight and obese employees. Methods: Sixty-three workers with body mass index (SMI) more than 24 were recruited in the study. The weight-reduction program included a sequence of 12 weekly lessons. All participants attended the nutrition education course in the beginning four weeks. In the following eight weeks, they were divided into Group A and Group B. Subjects compiled a detailed self-report diet diary in Group B, whereas subjects of Group A did not complete. The dietary questionnaire survey and body measurement were taken before the program. Body measurement was checked again after the course finished. The comparisons of body weight and SMI between before and after the program were carried out. Results: About 70% of participants took proper exercise amount less than five weeks during the recent ten weeks. Fifty seven percent of participants reported that their sitting time was longer than walking time during the working hours. Regarding the dietary behavior, a large fraction (95.3%) of participants reported very good or good at avoiding high-fat diet. However, more than 70% of participants did not have good dietary behavior and proper culinary methods. Compared with the body weight and BMI of subjects before the program, subjects in Group A reduced 1.4 kg (1.95%) and 0.4 (1.47%) after the program, respectively, whereas subjects in Group B reduced 3.6 kg (4.63%) and 1.3 (4.56%), respectively. Conclusions: The workplace weight-reduction program in providing nutrition education slightly affected weight loss. The program including nutrition education combined with using a diet diary would promote the effect on weight reduction.
