Disintegrating Force Measurement by Texture Analysis

質地分析於量測崩散力之運用

摘要


崩散力是研究崩散現象一很重要的參數。崩散力的測定常藉由特製的儀器及軟體,使得一般大眾很難做其測定。本研究嘗試用質地分析儀來量測崩散力,並探討實驗條件像測驗前速度、起動力量、濾紙之影響,並獲得測驗前速度0.2毫米/秒、起動力量5克等實驗適合條件。量化之參數如最大崩散力、崩散力產生速率、曲線下面積,可由崩散力對時間之圖形得到。由改變實驗條件而引起這些參數之改變,可來解釋不同之崩散行爲。本結果顯示質地分析儀可作爲探討崩散行爲之另一種工具。

The disintegrating force is a very important parameter in studying the disintegration phenomenon. In the past it has usually been measured by custom instruments and software, making it difficult for the public to duplicate. In this study, a texture analyzer was explored to study the disintegrating force. Experimental conditions such as pretest speed, trigger force, and filter paper were studied. Optimized conditions of pretest speed 0.2 mm/s and trigger force 5 g for instrumental variables were obtained. Quantitative parameters such as maximum disintegrating force, disintegrating force generation rate slope, and the area under the curve were derived to characterize the disintegrating force versus time profiles. The change of these parameters corresponding to the change of experimental conditions was used to explain different disintegration behavior. The results suggest that texture analyzer may be used as an alternative tool to study the disintegration behavior.
